What Every Sushi Chef Cannot Live Without

Irvine, CA. August 4, 2003 - Kyocera has launched a new, custom-made, 8.25" single-edge sashimi knife. Unlike traditional knives, this sashimi knife is made out of a highly advanced ceramic (zirconium oxide) that is lightweight, will never rust, and will retain its cutting edge 10 times longer than any steel blade.

The sushi market continues to grow and is up another 25% this year. Given this demand, Kyocera decided to create a sashimi knife with the "ceramic advantage" that our customers have come to enjoy in our other cutlery lines. Hand-crafted in Japan, each knife is sintered at extreme temperatures in a sealed vacuum for over 24 hours at 20,000 tons of pressure. This pressurized-firing method increases the density of the blade, producing the highest grade of ceramic available. Each knife is then subjected to a multi-part process including tumbling, diamond-belt grinding, diamond-wheel honing, and buffing. Lastly, the sashimi blade is precision polished to a mirror-finish similar to that of ceramic watchbands used by prestigious Swiss manufacturers. The handles are created from a pakka wood in a traditional, octagonal design that provides a slip-resistant grip.
